Quick and Kid-Friendly Chicken Dishes for Weeknights

As the main cook in my family, I really appreciate meals that don’t take forever to prepare. I tend to save the more elaborate recipes for the weekends, while weeknights are all about simplicity! Today, I’m excited to share some of my favorite go-to chicken dinners that might just become staples in your household, too. A bonus? Many of these recipes are packed with veggies, so you won’t need to whip up a ton of side dishes!

Meal Idea #1: Chicken Tacos

Serves: 4-6

Tip: This is great for meal prep! Make it on a Sunday and reheat during the week for a quick dinner.

Ingredients:

  • 1.5 – 2 pounds of skinless chicken breast (frozen or thawed)
  • 1 packet taco seasoning (or make your own)
  • 1 can (10 oz) Rotel taco mix
  • Tortillas, lettuce, cheese, sour cream, or any toppings your family loves

Directions:

  1. In your crock pot, add the taco seasoning, chicken, and Rotel. Mix it up!
  2. If the chicken is frozen, it will take about six hours to cook; if thawed, it should be ready in 3-4 hours.
  3. Shred the chicken with two forks and mix it well with the juices.
  4. If it seems too dry, add a splash of chicken stock.
  5. Serve in tortillas with your favorite toppings.

Meal Idea #2: Chicken Alfredo Bake

Serves: 4

Tip: The prep is a bit more involved, but you can cook the chicken, veggies, and pasta the night before to make it easier!

Ingredients:

  • 1/2 pound cooked chicken, diced
  • 1 bag California blend frozen veggies (broccoli, cauliflower, carrots)
  • 1 jar Alfredo sauce
  • 8 oz mozzarella cheese
  • 8 oz bow tie pasta
  • Garlic powder

Directions:

  1. Cook pasta until al dente and steam the veggies.
  2. Brown the chicken with some garlic powder.
  3. In a baking dish, combine the chicken, Alfredo sauce, and veggies.
  4. Top with mozzarella cheese and bake at 350°F for about 30 minutes, until bubbly and golden.

Meal Idea #3: Jambalaya

Serves: 4

Tip: When making this, I often double the recipe so I have extra for later. It’s just as easy to prepare two meals at once!

Ingredients:

  • 1 cup long-grain white rice
  • 3 tablespoons dried minced onion
  • 1 tablespoon dried parsley flakes
  • 1 tablespoon beef bouillon granules
  • 1/2 teaspoon each of your favorite spices (adjust for kids)

If you’re worried about spice levels for little ones, feel free to skip out on the cayenne pepper; this dish can get pretty zesty!
