As the season for s’mores arrives, it’s time to elevate your dessert game. In my household, we’ve always enjoyed experimenting with our s’mores creations. My personal favorite? Swapping out traditional graham crackers for two peanut butter cups. Those honey-flavored crunchers simply don’t cut it for me.

Once, my kids suggested using two chocolate chip cookies instead of the usual components. I thought, “Why not?” After all, I must have birthed some culinary prodigies.

Next, add your chocolate of choice (I opted for classic Hershey’s but later wished I had gone for Ghirardelli caramel squares) and a marshmallow. The warmth of the bacon enhances the melting of the chocolate like nothing else. It was the perfect treat to enhance my Friday evening.

To my surprise, the bacon complemented the chocolate and marshmallow exceptionally well, and before I knew it, half of my dessert was gone. A word of caution: have plenty of water on hand, as you might find yourself quite thirsty after indulging.

My youngest son, who is notoriously picky, devoured these treats. The older two were indifferent, which was fine by me—more for us! While preparing these bacon s’mores requires more effort than simply grabbing a box of graham crackers, they are worth it. They won’t be an every time treat, but I plan to whip them up several times this summer. Maybe if I have cravings or leftover bacon from breakfast, or just to celebrate the end of the week.

Although I’ve been labeled a “garbage gut” in the past, one bacon s’more was more than enough for me—unlike the usual s’mores. So, in a way, they could be considered a healthier indulgence, right?

Also, be warned: if you have a dog, the aroma of these s’mores will drive them wild, so keep your treat close at hand.
