Spaghetti Squash with Turkey Meatballs
Ingredients:
- Spaghetti squash
- 1 lb. ground turkey
- 1/2 white or sweet onion
- Hunts basil and oregano diced tomatoes
- 1 large can of Hunts tomato sauce
- Salt and pepper
- 1 egg
- 1/2 cup Panko bread crumbs
Preparation:
- Preheat your oven to 350°F.
- Bake the spaghetti squash whole (don’t forget to poke holes in it!) for about 1 to 1.5 hours.
- In a large bowl, mix the ground turkey, chopped onion, diced tomatoes, basil, oregano, salt, pepper, egg, and Panko until well combined.
- Form the mixture into 1-inch meatballs (yields about 40).
- Arrange the meatballs on a greased baking sheet and bake for 25 minutes.
- In a saucepan, heat the Hunts tomato sauce and diced tomatoes.
- Serve the meatballs topped with the sauce.
