Spaghetti Squash with Turkey Meatballs

Ingredients:

  • Spaghetti squash
  • 1 lb. ground turkey
  • 1/2 white or sweet onion
  • Hunts basil and oregano diced tomatoes
  • 1 large can of Hunts tomato sauce
  • Salt and pepper
  • 1 egg
  • 1/2 cup Panko bread crumbs

Preparation:

  1. Preheat your oven to 350°F.
  2. Bake the spaghetti squash whole (don’t forget to poke holes in it!) for about 1 to 1.5 hours.
  3. In a large bowl, mix the ground turkey, chopped onion, diced tomatoes, basil, oregano, salt, pepper, egg, and Panko until well combined.
  4. Form the mixture into 1-inch meatballs (yields about 40).
  5. Arrange the meatballs on a greased baking sheet and bake for 25 minutes.
  6. In a saucepan, heat the Hunts tomato sauce and diced tomatoes.
  7. Serve the meatballs topped with the sauce.
