The Ultimate Ice Cream Cake

Yesterday marked the fifth birthday of my little one, Tyler, much to my surprise and not without some reluctance. However, when it comes to birthday wishes, my child’s desire for an ice cream cake was something I couldn’t refuse.

Tyler’s father, Michael, often reminisces about a dessert from his childhood known as “Choco Delight.” This simple recipe included just three components: chocolate cakes, ice cream, and homemade chocolate sauce. While I appreciated the nostalgia, I couldn’t help but think it could be elevated. Instead of using store-bought sauce, I prepared my own from scratch. With both vanilla ice cream and crushed chocolate cookies on hand, I enhanced the ice cream with an abundance of cookie pieces—far more than any commercial option could offer. The result? A decadently rich treat.

If only you could taste it! It’s quite remarkable. Should you wish to create your own, here’s what you’ll need:

  • Two boxes of chocolate snack cakes, each cut into six sections
  • Two gallons of your favorite ice cream, softened
  • Homemade chocolate sauce (Alternatively, you could use two jars of store-bought, but I assure you, making it fresh is worth the effort. It takes merely five minutes!)

Homemade Chocolate Sauce Recipe:

In a saucepan, simmer 1 container of sweetened condensed milk, 1 bag of semi-sweet chocolate chips, 1 square of unsweetened baking chocolate, and 1 tablespoon of butter until melted. Stir in 1 tablespoon of vanilla. That’s all it takes!

Assembly Instructions:

Begin layering with the chocolate cakes, followed by a generous scoop of ice cream, and then drizzle with the chocolate sauce. Continue layering until you reach the top of the bowl. Don’t forget to sprinkle any chocolate crumbs that have accumulated from slicing. Finally, place the creation in the freezer for a couple of hours to allow it to set.

The response from the kids was ecstatic—they literally licked their plates clean, including Michael. They have already requested that I make this dessert for every birthday celebration this year. I’m more than happy to oblige, as it’s virtually foolproof and can’t be overcooked like traditional cakes.
