Yes, banana pudding is a well-known dessert, but its unique combination of pudding, ripe bananas, vanilla wafers, and whipped cream makes it an extraordinary comfort food.
While I have previously made banana pudding from scratch, including whipping the cream by hand, I eventually opted for a simpler version that requires minimal effort. Surprisingly, this easy banana pudding is often preferred by those who try it.
The Easy Banana Pudding Ingredients
- 2 packages of instant vanilla pudding (1 oz each)
- 2 overripe bananas
- 1 container of whipped topping, thawed
- 1 package of vanilla wafers
Instructions:
- Prepare the instant pudding according to the package instructions for pie filling in a large bowl. Once it sets, gently fold in the whipped topping and refrigerate.
- Slice the bananas into ½-inch thick pieces.
- Begin layering the ingredients in a 2-quart casserole dish: start with a layer of vanilla wafers, followed by a layer of banana slices, and then a ½-inch layer of pudding mixture. Repeat these layers until the ingredients are exhausted or you reach the top of the dish, ensuring the final layer is pudding.
- For a more sophisticated presentation, consider serving individual portions in ramekins.
- Refrigerate for a minimum of 4 hours, but overnight is ideal. The extended refrigeration enhances the flavor profile and allows the wafers to soften into delightful little vanilla cakes!
