As summer approaches, various flavors evoke memories of warm days, such as watermelon, hot dogs, and potato salad. However, nothing encapsulates the essence of summer quite like s’mores. The mere mention of s’mores conjures nostalgic images of sticky fingers, charred sticks, glowing campfires, starry nights, and the joyful laughter of children. Throughout the years, numerous recipes have attempted to recreate the s’mores experience in a bar or cookie form, but many have not lived up to my expectations. I sought to replicate the melty sensation of a perfectly toasted marshmallow, the crispness of graham crackers, and the rich chunks of chocolate.
Hershey’s chocolate has always been my preferred choice; while I occasionally indulge in gourmet chocolates, my heart truly belongs to Hershey’s. A s’more simply isn’t complete without it. This recipe features a total of eight bars mixed into the batter, complemented by ten ounces of broken graham crackers. I opted for larger pieces to achieve a textural contrast with each bite, reminiscent of a traditional s’more.

S’more Bars Ingredients:
- 3 cups flour
- 1 Tbsp baking soda
- 1 tsp salt
- 2 sticks butter, softened
- 2 cups brown sugar, packed
- 4 eggs
- 2 tsp vanilla extract
- 10 oz graham crackers, broken into large pieces
- 1 (10 oz) bag of marshmallows
- 8 Hershey bars, broken into small pieces
Instructions:
- Preheat the oven to 350ºF and grease a 9×13-inch baking dish.
- In a large mixing bowl, combine flour, baking soda, and salt. Set aside.
- Using a stand mixer or handheld mixer, cream the softened butter and brown sugar together until the mixture is light and fluffy.
- Add eggs one at a time, mixing at low to medium speed until just incorporated.
- Mix in the vanilla for an additional minute at low to medium speed.
- Gradually add the flour mixture, stirring until just combined.
- Gently fold in the graham crackers, marshmallows, and chocolate by hand.
- Press the mixture into the greased baking dish. Bake for 30 minutes, or until golden brown. To check doneness, insert a toothpick into the batter—avoid areas with chocolate or marshmallows for an accurate reading.
- Allow the bars to cool in the refrigerator before serving. Store any leftovers in the fridge.
